These are adapted from Sally’s Baking Addiction
Ingredients
1 pound (454 g) dried black beans or 6 cups cooked black beans (6 14-ounce cans) drained and rinsed
2 tablespoons oil (vegetable, canola, or olive work well)
1 /12 cup flavorful spicy peppers (jalapeno, Anaheim, cubanelle, or similar), minced
2 cups onion, diced
6 cloves garlic, minced
1 tablespoon cumin powder
2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon paprika
1 teaspoon kosher salt, or to taste
1 teaspoon black pepper, ground
1 cup bread crumbs
1 cup feta cheese, crumbled
6 large eggs, lightly beaten
2 tablespoons Worcestershire sauce
1/4 cup mayonnaise
4-6 tablespoons oil (vegetable, canola, or non-EVOO olive work well)
Directions
- If using dried beans: rinse, soak overnight with 1 teaspoons salt, discard soaking water, rinse again, and cook beans. If using pressure cooker, cover with just enough water to submerge beans, add 1 teaspoon salt, and pressure cook on high for 3 minutes. Allow pressure to decrease naturally for 10 minutes, then quick release.
- If using canned beans, drain and rinse the beans.
- Preheat the oven to 325 degrees Fahrenheit. While the oven is heating, spread the beans on a rimmed baking sheet. Bake the beans for 15 minutes, until somewhat dried out. Remove from the oven and allow to cool slightly.
- While the beans are cooking, heat 2 tablespoons olive oil in a heavy-bottomed or cast-iron frying pan over medium heat. Add the peppers and onions and cook until onions just start to brown, stirring frequently. Add the garlic and cook 1-2 minutes more, until the garlic softens. Remove from heat and set aside to cool slightly, then transfer to a large mixing bowl.
- Add the cumin, chili, garlic powder, paprika, salt, and pepper to the pepper/onion/garlic mixture and toss to combine. Add the beans. Use a potato masher or your hands to smash the beans. The beans should be mostly smashed, but there should still be a few visible bean pieces.
- Add the bread crumbs, feta cheese, eggs, Worcestershire sauce, and mayonnaise. Mix well to combine. Shape into patties. For a regular-sized burger, use about 1/3 cup of the mixture.
- In a large frying pan or electric skillet, heat 2 tablespoons oil over medium heat. When the oil is hot, place the burgers in the pan. Heat until the bottoms are browned and crispy, about 5-7 minutes. Add 2 tablespoons of oil and flip patties over and cook until the other side is browned and crispy, about another 4-6 minutes. Remove to a paper-towel lined plate.
- These may be frozen with parchment paper between layers.
