Pesto

Ingredients

  • 2 cups fresh basil, washed and packed tight

  • 2 large cloves garlic

  • 1/2 cup good olive oil

  • 1/4 cup grated Parmesan cheese

  • 1/4 teaspoon kosher salt

  • 1/2 cup pine nuts (optional)

Directions

  • Place all ingredients in a food processor. Process to desired consistency.

This keeps for about a week in the refrigerator or can be frozen indefinitely.
