Grandma Nelson’s Danish Omelet

Ingredients

  • 4 slices of bread, toasted

  • 4 slices of bacon

  • 10 eggs

  • 1/2 cup (120 ml) milk

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 black pepper

  • 1/4 teaspoon garlic salt

Directions

  • Preheat oven to 350ยบ F.
  • Brown bacon lightly in 10″ cast iron skillet. Remove bacon and drain most of the grease. Break the bacon into pieces and return to pan.
  • Break the toasted bread in half and place in pan on top of bacon.
  • In a medium bowl, mix eggs, milk, baking powder, salt, pepper, and garlic salt until well-blended. Pour into pan, completely submerging toast.
  • Bake 15-20 minutes, until set through.
