Ingredients
1 tablespoon canola oil (15 ml)
1/2 yellow or white onion, thinly sliced
1-2 jalapeno or other spicy peppers, thinly sliced
1 pound boneless skinless chicken breast plus 1 pound boneless skinless chicken thigh (can also use bone-in chicken; see directions for cooking and preparation differences)
4 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon coriander powder
1/2 teaspoon paprika
1/2 teaspoon oregano
1 teaspoon kosher salt
juice of one orange (navel or similar)
juice of two limes
1/2 cup fresh cilantro (optional)
Directions
- Turn pressure cooker to saute. Add oil, and when the monitor reads “hot” add onions and peppers. Cook until softened, about 3 minutes. Add garlic and cook until garlic is softened, about 3 minutes more.
- Place the chicken on top of the onions/peppers/garlic. Add the chili powder, cumin, coriander powder, paprika, salt, and oregano. Toss to combine. Squeeze the orange and limes over all. If using fresh cilantro, place it on top.
- Close the pressure cooker and cook for 12 minutes on high pressure if using boneless/skinless breasts and thighs. Cook for 20 minutes on high pressure if using bone-in chicken (see note). Allow to naturally release pressure for 10 minutes, then manually release remaining pressure.
- If using boneless/skinless chicken, shred immediately, and mix with the cooking liquid.. If using bone-in chicken, use a slotted spoon to remove the chicken pieces from the pressure cooker. Allow the chicken to cool until you can safely touch the chicken. Remove the meat from the bones and skin, being careful to also separate out any connective tissue or bone pieces. Return the meat to the pressure cooker, shred, and mix with the cooking liquid.
Note: if using bone-in chicken, the chicken should be falling off of the bone and easily shredded with two forks. If it is not, then return to pressure cooker for an additional 5 minutes. Manually release the pressure after the additional 5 minutes.
