Ingredients
- Bar Base
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup light brown sugar, firmly packed
1 teaspoon vanilla extract
2 large eggs, at room temperature
1 cup salted all-natural peanut butter (creamy is best)
2 cups instant oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
- Peanut Butter Topping
1 cup salted all-natural peanut butter (creamy is best)
- Frosting
1/2 cup butter, softened
1/4 cup milk
1 teaspoon vanilla
1/2 teaspoon espresso powder (optional)
4 tablespoons cocoa powder
3 cups powdered sugar
Directions
- Preheat oven to 350ยบ F. Prepare a 1/2 sheet pan by spraying it with cooking spray or greasing it with butter.
- Cream together the butter, sugar, and brown sugar until light and fluffy, about 3 minutes. Stop the bowl 1/2 way through and scrape down the sides. Scrape down the sides at the end.
- Add the vanilla, eggs, and peanut butter. Mix on medium-low speed until well-combined.
- Add oats flour, baking soda, and salt. Mix on medium-low speed until combined and starting to clump and clear the sides of the bow.
- Evenly spread on the prepared baking sheet. Bake 15 minutes and remove from oven.
- For the peanut butter layer, drop the remaining 1 cup of peanut butter even over the surface of the hot base. Allow to sit about 5 minutes until the peanut butter is soft. Carefully spread to evenly cover the base. Allow to briefly cool.
- While the base/peanut butter topping is cooling, make the frosting. Beat all frosting ingredients until smooth, creamy, and well-mixed.
- Spread the frosting evenly over the top of the still-warm base. Allow to cool completely before cutting into squares and removing from pan.
