Ingredients
1/2 cup (113 g) butter
1/2 cup (120 ml) heavy cream
3/4 cup (70 g) grated (not powdered!) Parmesan cheese
1/2 teaspoon (2 g) kosher salt
Dash of black pepper
Directions
- Heat the butter and cream over medium-low heat until the butter is melted. When the mixture starts to simmer, reduce the heat to low and simmer 4-6 minutes, until slightly thickened.
- Add the Parmesan cheese, and continue to heat on low, whisking constantly, until the cheese is dissolved.
- Whisk in the salt and pepper. Serve immediately or coat pasta immediately.
