Breadsticks

Ingredients

  • 1 1/2 cups (360 ml) warm water

  • 2 teaspoons (8.5 g) granulated sugar

  • 2 1/4 teaspoons (7 g) dry yeast (instant or dry active)

  • 1 1/2 teaspoons (9 g) salt

  • 4 to 4 1/2 cups (480-540 g) all-purpose flour

  • 1 tablespoon (15 ml) vegetable or canola oil

  • Topping
  • 1/2 cup (45 g) shredded Parmesan cheese

  • 1-2 tablespoons chopped fresh herbs, such as oregano or thyme

  • 1/2 teaspoon (3.5 g) garlic salt

  • Stick butter, for rubbing on the top of the breadsticks

Directions

  • Dissolve yeast and sugar in warm water in a mixing bowl. Let stand for 2-3 minutes until yeast bubbles. If using a stand mixer, fit it with a dough hook.
  • Add all salt and 2 cups (240 g) of flour. Mix for 1 minute on level 2 speed. Raise speed to 3 and gradually add in remaining flour, 1/2 cup (60 g) at a time. The final dough should mostly pull away from the bowl and be very slightly sticky.
  • Pour 1 tablespoon (15 ml) oil over the dough and flip the dough around in the bowl to coat the dough with oil. Cover with a cloth and allow to rise for about 30 minutes, or until doubled in size.
  • Prepare a baking sheet (1/2 sheet pan size is good) with spray. When the dough has doubled, remove from the bowl and place on a floured surface. Roll into a 9×12″ rectangle and cut 1″ strips of dough. Take each piece of dough and flip it over your finger, with both sides hanging down. Twist the piece to make a breadstick twist. Place each breadstick on the prepared pan. The sides should not be touching at this time, but they will touch as the dough rises and bakes.
  • Cover the pan with a cloth and allow to proof an additional 15 minutes. While the dough is proofing, preheat the oven to 375ยบ F.
  • Bake for 12 minutes, until just starting to be light brown. While the breadsticks are baking, prepare the topping: mix together the Parmesan cheese, chopped herbs, and garlic salt and place in a bowl. Remove the lightly browned breadsticks from the oven and run the end of the stick of butter over them. Sprinkle the topping mixture evenly over the top. Return to oven and bake until the topping is melted and browned, about 5-6 more minutes.
