Masa for Tamales

Ingredients

  • 4 cups masa harina

  • 3/4 teaspoon table salt or 1 1/2 teaspoons kosher salt

  • 1 1/2 teaspoons baking powder

  • 3/4 cup + 2 tablespoons canola oil

  • 3 1/2 cups chicken broth

Directions

  • In a large bowl, mix the masa harina, salt, and baking powder until well combined.
  • Add the oil and mix until well combined.
  • Add the broth and mix until the liquid is absorbed and well-incorporated, about 3 minutes. It should be thick but spreadable. If needed, add more masa harina (if it is too wet) or broth (if it is too dry).
