Savory Pastry Crust (Pate Brisee)

Ingredients

  • 2 1/2 cups (300 g) all-purpose flour

  • 3/4 teaspoon salt

  • 1 1/2 sticks (170 g) cold unsalted butter, cut into 1/2 inch cubes

  • 4 oz (57g) cream cheese, cut into 1/2 inch cubes

  • 90 ml (6 tablespoons) ice water

Directions

  • Using a metal blade, mix flour and salt in a food processor.
  • Add butter and cream cheese. Pulse in 3-4 second pulses until the mixture is like coarse sand.
  • Drizzle the ice water over the top of the mixture. Pulse in 4-5 second pulses until the dough just barely starts to come together but does not yet clump substantially.
  • Divide into two pieces–each will be about 300 g. Shape each piece into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes before using.

Notes

  • This makes two single 9″ pie crusts For a deep dish 9″ pan or a 10″ pan, you will need 1.5 times this recipe.
