Ingredients

  • 1/2 cup (113 g) butter

  • 1/2 cup (120 ml) heavy cream

  • 3/4 cup (70 g) grated (not powdered!) Parmesan cheese

  • 1/2 teaspoon (2 g) kosher salt

  • Dash of black pepper

Directions

  • Heat the butter and cream over medium-low heat until the butter is melted. When the mixture starts to simmer, reduce the heat to low and simmer 4-6 minutes, until slightly thickened.
  • Add the Parmesan cheese, and continue to heat on low, whisking constantly, until the cheese is dissolved.
  • Whisk in the salt and pepper. Serve immediately or coat pasta immediately.
