Overnight Breakfast Casserole

Ingredients

  • 8 slices bread

  • 1 pound (454 g) seasoned pork sausage, cooked through and broken into pieces

  • 2 cups (454 g) shredded medium cheddar cheese

  • 8 eggs

  • 2 1/2 cups (600ml) milk

  • 1 (3.5 g) teaspoon ground mustard

  • 1/2 teaspoon (3 g) salt

  • Ground black pepper, to taste

Directions

  • Spray a 13x9x2 inch pan with cooking spray. Cut the bread into cubes and place in pan. Sprinkle sausage over bread cubes and cheese over sausage. Mix together with your hands.
  • Beat the eggs, milk, mustard, salt, and pepper until well-blended. Pour mixture over bread/sausage/cheese. Cover and refrigerate with foil overnight.
  • When ready to make the casserole, preheat the oven to 350ยบ F. Bake for 20 minutes, then remove the foil and bake for another 20 minutes, until the casserole is puffed and the eggs are cooked in the interior.
