Ingredients
2 Tbsp. Olive oil
1 diced onion
1 lb. ground pork
2 cups chicken or turkey broth
1 tsp. salt
1 tsp. paprika (or to taste)
1 tsp. black pepper (or to taste)
Parmesan cheese
Sriracha
2 cups cooked brown rice
Directions
- All the cooking is done in a cast iron pot with cover
- Cook the onion in the olive oil over medium heat until soft (about 5 minutes)
- Add the ground pork and cook until pork is not pink
- Add 1/2 cup of the stock and cook until stock has been reduced and the pork is frying
- Add another 1/2 cup of stock and reduce this as well
- Add spices: salt, pepper, paprika
- Add the cabbage, cover and cook until wilted – about 15 minutes
- Add 1 cup of stock, cover, and simmer for 20 minutes
- Serve pork cabbage over the rice, and topped with Parmesan cheese and sriracha
