Ingredients
2 pounds potatoes
1/4 cup butter
1/2 cup chopped onion (1 medium)
1 Tbsp. four
1 tea. salt
1/4 tea. ground black pepper
2 cups milk
8 oz. shredded sharp cheddar cheese
1/4 cup fine bread crumbs
Directions
- Pre-heat oven to 375ยบ F.
- Cut potatoes into 1/8″ slices
- Melst butter in a saucepan over medium heat. Add chopped onion when the butter is melted and cook until onion is tender and translucent (about 2 minutes)
- Add flour, salt, and pepper to the onions and butter, and stir until bubbly
- Stir in milk and 6 oz. of the cheese, and boil for 1 minute
- Spread potatoes in a casserole dish and pour the cheese mixture over the potatoes
- Bake uncovered for 1 hour
- After baking for 1 hour, sprinkle the cheese, breadcrumbs, and paprika on the top of the dish
- Bake until top is browned, about 15-20 minutes
