2 ears corn, decobbed or 1 1/2 cups frozen corn, cooked and cooled.
3-4 Roma tomatoes, diced
1/2 sweet or red onion, diced
1 1/2 cups or 1 15 ounce can black beans, rinsed
1/2 cup cilantro, washed and chopped
3 scallions, sliced
Juice of one lime
3 T. olive oil
Salt to taste
Cayenne pepper to taste
