Black Bean and Corn Salad

Ingredients

  • 2 ears corn, decobbed or 1 1/2 cups frozen corn, cooked and cooled.

  • 3-4 Roma tomatoes, diced

  • 1/2 sweet or red onion, diced

  • 1 1/2 cups or 1 15 ounce can black beans, rinsed

  • 1/2 cup cilantro, washed and chopped

  • 3 scallions, sliced

  • Juice of one lime

  • 3 T. olive oil

  • Salt to taste

  • Cayenne pepper to taste

Directions

  • Mix all ingredients in a bowl and serve.
