Pork Cabbage Over Rice

Ingredients

  • 2 Tbsp. Olive oil

  • 1 diced onion

  • 1 lb. ground pork

  • 2 cups chicken or turkey broth

  • 1 tsp. salt

  • 1 tsp. paprika (or to taste)

  • 1 tsp. black pepper (or to taste)

  • Parmesan cheese

  • Sriracha

  • 2 cups cooked brown rice

Directions

  • All the cooking is done in a cast iron pot with cover
  • Cook the onion in the olive oil over medium heat until soft (about 5 minutes)
  • Add the ground pork and cook until pork is not pink
  • Add 1/2 cup of the stock and cook until stock has been reduced and the pork is frying
  • Add another 1/2 cup of stock and reduce this as well
  • Add spices: salt, pepper, paprika
  • Add the cabbage, cover and cook until wilted – about 15 minutes
  • Add 1 cup of stock, cover, and simmer for 20 minutes
  • Serve pork cabbage over the rice, and topped with Parmesan cheese and sriracha
