Au Gratin Potatoes

Ingredients

  • 2 pounds potatoes

  • 1/4 cup butter

  • 1/2 cup chopped onion (1 medium)

  • 1 Tbsp. four

  • 1 tea. salt

  • 1/4 tea. ground black pepper

  • 2 cups milk

  • 8 oz. shredded sharp cheddar cheese

  • 1/4 cup fine bread crumbs

Directions

  • Pre-heat oven to 375ยบ F.
  • Cut potatoes into 1/8″ slices
  • Melst butter in a saucepan over medium heat. Add chopped onion when the butter is melted and cook until onion is tender and translucent (about 2 minutes)
  • Add flour, salt, and pepper to the onions and butter, and stir until bubbly
  • Stir in milk and 6 oz. of the cheese, and boil for 1 minute
  • Spread potatoes in a casserole dish and pour the cheese mixture over the potatoes
  • Bake uncovered for 1 hour
  • After baking for 1 hour, sprinkle the cheese, breadcrumbs, and paprika on the top of the dish
  • Bake until top is browned, about 15-20 minutes
