Ingredients

  • 2 tablespoons oil or ghee

  • 1 teaspoon cumin seeds

  • 1 1/2 cups diced onions

  • 1 tablespoon garlic, minced

  • 1 tablespoon ginger, minced

  • 1 long green chile, diced

  • 2 large tomatoes, diced

  • 10 cashews

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon cayenne pepper or other pepper powder

  • 1 tablespoon fenugreek leaves

  • 1 1/2 teaspoons garam masala

  • 1 teaspoon kosher salt

  • 1/2 cup water

  • 1 cup frozen green peas

  • 1/4 cup cream

  • 6 ounces paneer, cut into 3/4 inch cubes

Directions

  • Set electric pressure cooker to saute on high. Add oil. When oil is hot, add cumin seeds. Cook to release spices, about 30 seconds, stirring.
  • Add onions, green chile, garlic and ginger. Saute for 5-6 minutes, stirring frequently, until onions start to brown.
  • Add tomatoes, cashews, spices, salt, and water. Stir to combine. Close lid on pressure cooker and cook for 4 minutes on high. When cook time is finished, do a quick release of the pressure.
  • Blend all ingredients with an immersion blender. Add peas, stir to combine, and close lid on pressure cooker. Cook for 2 minutes on high. When cook time is finished, do a quick release of pressure.
  • Set to saute. Stir in cream and paneer. Cook, stirring frequently, until sauces thickens, about 3 minutes
